A fresh restart

I created this blog 3 years ago on May 22, 2010 as a “recipe diary”. Here, I saved pictures and recipes of things I wanted to cook and bake. If you actually look through this though…I have saved and shared plenty, but cooked none.


May 19 2013…I will reattempt to follow my original goal! This is my mid-year resolution.

History of Macarons

A macaron (French pronunciation: [makaˈʁɔ̃])[1][2] is a sweet confectionery made with egg whites, icing sugar, granulated sugar, almond powder or ground almond, and food coloring. The macaron is commonly filled with buttercream or jam filling sandwiched between two cookies. Its name is derived from an Italian word “maccarone” or “maccherone”. This word is itself derived from ammaccare, meaning crush or beat, used here in reference to the almond paste which is the principal ingredient.[3] It is meringue-based: made from a mixture of egg whites, almond flour, and both granulated and confectionery sugar.

Recipe: Tortellini Salad with Roasted Peppers, Tomatoes, and Eggplant

Ingredients:
1 medium eggplant (about ½ lb.) cut into ½ inch dice – $2.00
salt – stock
dried oregano – stock
olive oil – stock
1 large shallot, diced – $0.39
3 medium tomatoes, (about ¾ lb.) cored, seeded, and cut into ½ inch dice –
1 clove garlic, minced – stock

Recipe: Mascarpone Stuffed Strawberries



Prep time: 20 mins Total time: 20 mins Ingredients

  • 12 strawberries
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 3 tbsp sugar
  • 12 blueberries
Instructions
  1. Slice off top end of strawberry so that the strawberry can stand on a flat surface. Then make a deep knife cut on top of strawberry. You want to make two cuts for each strawberry in the shape of an “X” or a cross. You want to cut about 3/4 of the way down, but not all the way. Use your finger to help separate the petal of the strawberries so that they open up enough for stuffing.
  2. In a stand mixer, mix the mascarpone cheese, heavy cream and sugar until it is fully mixed and forms a whipped cream frosting look (it will probably curdle first before coming together).
  3. Put mixture into a piping bag and pipe the strawberries.
  4. Top with blueberries
